Bikini

Yields 10 servings

Ingredients for the Clementine Cordial (yields 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar

For the Cocktail (makes 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing

Method

For the Citrus Syrup: Put every ingredients inside a pan, bring to a gentle boil, mixing so the sugar melts. Next, turn off the burner allowing it to cool down entirely. Transfer to a clean bottle, seal and store in the fridge, where it will keep for about a month.

To make Batch Mix: Mix the specified spirits and syrup into a big jug, let it rest for an hour, then filter it best through muslin, so it's fully clarified.

To serve: Pour 85ml of the batch mix into your cocktail shaker packed with ice, gently stirring gently for a minute to chill. Filter into a chilled martini glass or equivalent, decorate with a few cranberries adding the final touch by giving it a brief mist of mandarin oil over the top.
